The taste of childhood

We made pancakes every Wednesday when I was growing up. I can recite the quantities for each ingredient, like a poem learnt by heart – in French, even though I think in English these days.

I still eat them plain, with just a sprinkling of sugar, because I was an incredibly picky eater as a child and that’s the only way I would eat pancakes. It’s the taste of childhood.

Pancake recipe

Here’s the recipe (this should make around 16 pancakes):

  • 250g flour

  • pinch of salt

  • 4 eggs

  • 500ml milk

  • 1 tbsp sunflower oil

  • 1/2 tsp vanilla extract (the original recipe calls for 1/2 sachet of vanilla sugar)

Mix the flour and salt, beat in the eggs, gradually add the milk, then the oil and vanilla extract. Rest for an hour. Add 1/2 ladleful of water to the batter before making the pancakes (in butter, always).
